Corned Beef Brisket with Herbed Vegetables

Cooking Time: 2 hour 45minutes to 3 hour 45minutes


2 1/2 to 3 1/2 pounds corned beef brisket

Water

1/2 pound each baby carrots and fresh green beans

16 pearl onions

2 T butter

1/2 teaspoon dried thyme leaves, crushed

1/4 teaspoon each dry mustard and dried tarragon leaves, crushed


Place corned beef brisket in Dutch oven; add water to cover. Cover tightly and simmer 2 /12 to 3 1/2 hours or until brisket is tender. Meanwhile steam carrots, green beans and onions 10 to 15 minutes or until crisp-tender. Melt butter in small saucepan; stir in thyme, mustard and tarragon. Drizzle over vegetables. Carve brisket diagonally across the grain into thin slices; serve with vegetables.
